Actually i cant recall any (3rd person at least), apart from... you know... tomb raider? Elder scrolls 3 4 and 5 (assuming you like swords and spells as well as guns)?
Alan wake is quite fun thou the ambient is more horror style than adventure.
Perhaps Dead space series?
Those come to mind right now.

Ditto for Star Wars 1313. Don't think that's out for quite some time yet too.

There are indeed shooter/adventure games like Farcry 3, but as for 3rd person adventure games like uncharted, I can't really think of any besides Tomb Raider, which I've never played.
