How do you OC a graphics card?

I've never done it. But I have a 6800 GT and I read that the one I got was easily OC'able over Ultra speeds so I figured it'd be worth trying. I have a liquid cooler if I need to put it on.

I am on a Asus P4C800-E Deluxe.

Ok, got the update and had a few questions.
My GPU temp says 56C (with stock fan) and ambient temp 32C, an Threshold temp of 120C. Are these fine?
And I assume I could lower the GPU temp from 56 to 26-32C by putting the liquid cooler on it. But would that be safe? I mean the cooler appears to be designed specifically for the CPU core only and not really the video ram. Or is the video ram no biggie and is fine being cooled by the air around it only?

I don't really have a lot of air flow though. I have the fan on my power supply blowing out, and another fan blowing down around that area, then the 3 fans outside my case for the liquid cooling. And if I take off the fan for the Graphics card that seems to be the only one blowing in that area.
