We're in the process of upgrading our non-essential development server with
a new motherboard and dual processors. The existing server is running two
IBM 256GB IDE hard drives configured as a striped RAID using a IT8212 PCI
RAID controller.
The new Gigabyte motherboard has an on-board Promise RAID controller.
What's the chances of moving the existing hard disks from one raid
controller to another and the data staying intact?

VERY LOW?
Sounds like you need a 512GB backup scheme. You do backup that information
that you now claim is worth keeping "intact" don't you?
