I could be wrong, and I think Quciktime is an awesome program, but yeah.
Doesn't do that to my knowledge.

I think QuickTime is a wrapper in much the same way
Video for Windows is a wrapper. Many different codecs
can be contained in either wrapper.

If I Select QuickTime as my output in Aftereffects, there
are options for DV codecs along with Sorenson, Cinepak,
M-JPEG, etc.. That makes me suspect that DV can be
used in a QuickTime environment, but I have not seen the
option to capture QuickTime as DV.

Right. I routinely produce DV QuickTime files. But I have never seen any
indication that I can do so within the QuickTime player. A separate
program [such as a NLE] is needed [which uses QuickTime behind the
scenes]. OTOH I can easily play those files in the QuickTime player.

Quicktime is quite the awesome program. Take a look at the list of
formats that QT will support:

Get a copy of Cinestream 3.1 (was $99 at B&H Photo).

It's sort of a shell for Quicktime although a very good NLE in it's own
right.

It captures natively in Quicktime (requires Quicktime 5).
