NTSC color/contrast necessary for Plasma/LCD/Projectors?

I am creating a DVD that will mix archival video, still images, yet-to-be
shot video, and original animation. The primary purpose will be a one-shot
presentation to a large audience who will view on either a large plasma or
LCD monitor, or projected on a screen. The playback device will either be a
notebook using firewire, or a set top DVD player using component outputs.
Need I respect the NTSC signal limitations (color gamut, gamma, etc.), or
can I go whole hog (millions+ colors, 0-255 RGB spectrum), assuming the
production will never be seen on an NTSC tube TV?
