Can someone explain the difference in the two ways of selecting a
filter? There is the funnel = icon then to the right there is the
triangle icon.

The funnel allows you to select multiple categories. The arrow next to
the funnel allows you to quickly select a single category, no category
or clear the filter. 99% of the time I just use the arrow since I want
one category.

Ed,

thanks. I was getting mixed up whether I was filtering "in" or
filtering "out"

PI's filters are "OR" so as you check items, you are including them in
your filter.
