Desktop text change

I am using windows 7. My desktop icon text starts out black but it changes after I have been using the computer for a while. It changes to white with shadows. My vision is poor and I have trouble reading the white text. How can I keep it from changing?

Have you already selected a high contrast theme?

Using the Start Menu choose Control Panel then Appearance and Personalization
Look for the Ease or Access Center
