OK, most people don't believe this but it is really simple:

In Windows XP go to START, Run, Cmd (or comamnd for older versions)

In de "DOS box" go to the directory where you want to land the resulting
file

Type after the prompt: copy x:\video_ts\VTS_01_1.vob +
x:\video_ts\VTS_01_2.vob result.mpeg

(x = DVD drive letter)

Depends on the composition I believe; audio can be in different
formats, so appropiate software is needed. De-multiplex the .vob in
its elementary streams and use the appropiate software, especially
concerning the audio, to join them. Convert the audio to a mpeg type,
if needed, then multiplex video (was already mpeg in any case) and
audio to a .mpg file.

You are right, but:
I may be wrong about this, and have no technical proof, but if the vobs
are part of the same set, like vts_01_1.vob vts_01_2.vob ..., then I had
great results just binary concatenating these.
In Linux cat vts_01_1.vob vts_01_2.vob > big.vob.

It would seem to make more sense to properly extract the
MPEG data and then edit and join or just join the .mpg
Why you want your MPEG in one big chunk, beats me;
unless you have a "raw" MPEG capable DVD player.

TMPGEnc DVD Author (TDA) can do a proper MPEG
extraction to a "Destination folder" of sequentially numbered
..mpg and VideoReDo is a great Joiner ( if you drag & drop
a selection of multiple .mpg files on the VideoReDo Icon,
it defaults to joining them.)

I do not want the big mpg, but the big vob, this for subtitling.
http://panteltje.com/panteltje/dvd/ submux-dvd will add subs to
an existing .vob.
The vobs can be further processed witg dvdauthor (the Linux dvdauthor).
This saves processing.
Nevertheless I take the big.vob (concatenated parts), demux
into one long mpv and mp2 and make a .wav from the mp2
(or AC3 of cause) so i can use it in teh subtitle editor xste.
Just one way to process.
I will probably never understand why they chop vobs.

I was and still am way ahead of all that with my Linux programs
I think, see the link.
I do not normally rip DVD so for me it is not that important.
There are some traps adding subs to existing VOB, re-authoring
is required, as the vobs will increase in size, and IFO sector info
will no longer be correct.

No, I do not believe that, so what you know is wrong.
I DO know that Linux is in many cases a much cheaper and better solution,
and that open source increases quality of products.
Competition should too, but there is hardly any left in the MS windows
word.
Also the fact that new competing companies start from scratch every time
and not from soft that has been improved and contributed to by many
puts many 'newcomers' in the MS windows world really really at a disadvantage,
and lowers the standards.
Sometimes they steal from open sorce projects too, do not reveal source,
some are caught in the act.
Kiss DVD player is such an example.

Would this leave some sort of "header info" from the 2nd VOB in the middle
of the mpeg file? (and potentially cause problems if I ever wanted to edit
the mpeg at a later date?) (or cause some media players to stumble when they
hit that spot in the mpeg?)

That is what I was afraid of, but so far demuxing that vob gives no problems.
Neither does playing it in Linux mplayer and Xine.
Neither does adding subtitles to it.
And that is all that was required....
I just had a look at the source code of dvdauthor (Linux) and it seems OK,
as the next vob is created at a specific point (the cut is made at a specific
point), but no extra data is inserted.
For all I can see.
There was some reason to split the vob, perhaps filesystem issue.

save joined file as mpg.
