The manual for my new P4C800-E Deluxe says that to set up a RAID 1
array I need 2 PATA drives and 1 SATA drive. I was under the
impression that all I needed was 1 SATA and 1 ATA. Is this a mistake
in the manual?

For a RAID 1 setup, you typically would use two SATA drives on the Intel
Controller for optimal performance. You could also use a pair of SATA
drives on the Promise controller, but why would you unless you already had a
boot drive on the Intel controller.
You could also put a pair of PATA drives on the Promise controller in either
RAID 1 or RAID 0.
And of course you could do something like Raid 0+1.
