I have only ever used Motherboards with IDE connectors.

Am looking at putting together a system with Athlon 64 but the
motherboards all seem to have SATA connections with "IDE on 2nd
Storage Controller" described in the product info.

Is it possible to simply use IDE Hard Drives in the "old-fashioned
way" on these boards or do I have to do something to overcome the SATA
connection, which is presumably on the first controller.

Any web page which gives an easy to understand guidance?

In general, you can use either controller interchangeably. You have an
option in the BIOS which controller.drive to boot from. Occasionally you
will get some limitations when you add another (PCI) controller to a
motherboard with 2 controllers already on it, but you will be fine with your
setup.
