P5GDC Deluxe Dual channel problem.

I just bought Asus P5GDC Deluxe motherboard.
with intel 3 GHz + 512 x 2 bus 533 dual channel RAM.

but in high cpu usage application, my cpu performance chart will not
go over 50 to 55 percent usage.
Why?
I am really confused.
Is it related to dual channel?
Should I set somthing to use dual channel?
or does the cpu performance chart (Windows - control panel -
administrative tool - performance) show only one channel. if so why
sometimes it goes over 50%???
