I've got and old system with a K7VZA mobo in it currently with an 800Mhz
T'bird.
I've come into possesion of a 1Ghz T'bird and a 1.2Ghz T'bird. Both working.

I know the mobo was only supposed to take 1Ghz max, but I did try the 1.2Ghz
in the board.
This worked for a while then became flaky, so I droppped it back to the 800.

Does anyone know if there is a Bios fix / update that can make this board
take the 1.2 ?, or should I just put the 1Ghz in and leave it at that?

There are BIOS updates available for this board, but take care because there
two board revisions, namely 1.0 and 3.0 and each takes a different update.
My memory on these boards specifications is a little rusty but I believe
that whatever you have, both of your faster CPUs should run OK, particularly
if they are 100mhz. versions (and even the 133mhz. versions should be fine
on the rev 3.0). BIOS updates are available from http://www.ecs.uk.com/
under the downloads section. You may need a new PSU to cure any system
instability issues with the faster CPUs.

Cheers, I will have a look to see what m/b / bios versions it has got and go
from there.
