Most Epson cartridges now include a chip which coarsely stores the
number of drops fired, and thus how much ink has been used. It is this
chip that tells the printer that the cartridge can no longer be used -
even though there may by ink remaining inside.
They can be refilled, but you need a chip resetter (either hardware or
software) to tell the chip that it is full of ink again.

Indeed, that is a software resetter as mentioned above, but be sure it
supports your Epson printer before committing to refilling.

RX500 original cartridges have a complex internal structure (i.e. no sponge)
and cannot be refilled in the usual way.
However resetting an original cartridge when it is "empty" can provide a
further (up to) 30% of printing.
