I build my cp and was wondering if there are games that use all 7 buttons
for fighting and what should they be configured like?

I originally put 8 buttons per player due to the fact the bottom row of
keys can be setup on NeoGeo games and also the fighting games for Final
Burn have an "All Kick" and "All Punch" options via a keypress.

I'm not aware of any, but I haven't played most fighters.
I will say that setup is good for a couple other reasons though. It
sort of mimics the fourth Neo Geo button, and if you put it close
enough to the joystick you can use it as the Reverse button in
Defender and the bomb button in twin stick+button games like Smash TV.

I have mine set up exactly like that and wouldn't change it.
