No need to do any registry editing, let the GUI/shell do it for you.
Right click on the My Documents icon on the desktop, select Properties,
select the Target tab and then click Move, then browse to and select the
required location. Apply and you will be asked if you wish to move the
contents of the current folder to the new location.

.... and if I don't have a "My Documents" icon cluttering up my
desktop?...

Either use Alan's method or temporarily put the My Documents icon on the
desktop, use it to change the location of My Documents and then remove the
icon. To add/remove the icon from the desktop check or uncheck as
appropriate the setting found towards the bottom of Folder Options | View
accessed either from the Control Panel or when in Windows Explorer through
Tools.

You shouldn't need to add it to the desktop if you still have "my
computer" on your desktop
double click "my computer"
then click on the up arrow button to go up the tree
you can then see my documents when you can right click and change the
location as previously described
