What exactly is being monitored by the 'system' temperature reading from NVMonitor on a Chaintech VFN4 board with an AMD64 3500+?

I know this is often referred to as the 'motherboard' temp, but what exactly is it monitoring? Something near or around the chipset?

It's the chipset temperature.

Excellent, thanks. I suspected that's what it was, but I know from experience that what I THINK is happening with a computer isn't necessarily so :D
