Jedi Knight II: Jedi Outcast finally had a good lightsaber in it. I played it just for the lightsaber and it was sweet. Yea, I'm a star wars geek but I think anyone can get some enjoyment from cutting up stuff with a lightsaber and watching them sizzle 
It has been out a while but it still has some pretty nice graphics and gameplay.
