Can you apply service packs to NT servers while users are still logged in?
Whould it be possible to install the SP and not re-boot untill the users are
logged off?

Thanks for any assistance

Depends on your setup. If you have multiple DCs then
users should be fine without 1 particular DC unless they
are directly accessing these particular servers e.g., file
and print sharing. In any case because of the risk you
should install SPs when the building is closed.
