Hi,
I would like to schedule a task to run each day, which would backup some
files from the computer drive to an external HD. However, I would ideally
like to have a backup folder/file per day of the week, rather than overwrite
the last backup each day.
For instance, I would have on the external drive the following folders:

Try a program called Second Copy 2000. Much better than windows will
probably ever be when it comes to backups.

With vanilla ntbackup You run a normal backup first. That
backs up everthing you input into it.
Then you run differential monday - friday. That backups
only what has changed from last normal backup each day it
runs.
On Saturday or Sonday you run a normal backup and start
the process again.
Ideally this is the way it works, but ntbackup is very
vanilla.
I use Stomp Backup MYPC if your serious about backing up.
