[HP] do you have to replace both print cartridges at once?

My mom has an HP psc 1315 xi, and as I'm here for Christmas
she's asked me to replace the black ink cartridge. The manual
talks only about replacing both cartridges at once, as far
as I can tell. If you replace just the black, does
it pull some dirty trick like telling the color one that
it's out of ink, or something?

No tricks here. You can replace only one cartridge, or even run the printer
with an empty cartridge. You do not need to replace the cartridge when you get
the low on ink warning; its purpose is to let you know that the ink may be
getting low to give you time to have a replacement on hand.
