I have SLI mainly because I had the spare cash and was doing a complete overhaul on my system so I went for it, mainly as an experiment. Do I like it? Yes because my LCD runs 1600x1200 native and I turn all the eye candy up and it runs well. But i don't love it, its no golden bullet to solve all my problems. I would recommend to 95% of the ppl looking at SLI to avoid it and just save the money for the next gen card. Just buy a 7900GTX/X1900XTX now, save the other $500 then just buy the next card to come out, or take your girl out to a nice dinner 
I got mine basically because I could afford it also. I had caved in from buying a new AGP card to doing a complete rebuild. I love my SLI it runs everything real smooth, much smoother than only one of the cards did. (I initially bought only one, but liked the boost so much I got another)
If and only if you have the money to burn go for it. Otherwise in most cases a good single card is good enough. 
I am able to play F.E.A.R. on my left monitor, and watch live T.V. with media center on my right monitor without any slowdown.
One videocard per monitor; if I'm really looking for great game performance I can enable SLI; although I've found over the past one card runs every game fine.
