I have worked like this for 2.5 years until I bought my first Phone Edition.

First it was with an old IPaq 3650, then with a Jornada 568, and latest with
an Axim X5 just like yours. Used a Socket Bluetooth card, which is a little
more expensive than others but has the best user interface I've seen.

Not only you will be able to send and receive mail... You will be able to
chat in MSN Messenger, and with such software like Running Voice GSM you
will be able to send SMS and even dial directly from your contacts.

Which phone carrier did you use - or does it matter?
