I need advice as to which soundcard and which speaker set I should purchase for an all out gaming rig. I don't really have a price range on the soundcard but I'd like to keep the speakers under $300.

I was wondering if anyone could tell me if 7.1 speakers are any better for gaming than 5.1? If they are, suggest some 7.1 sets even if they are over $300, otherwise just stick to what I have above.

I would recommend the SB Audigy 2 ZS.
It is well worth the money, and the simple version ($120 or so) is adequate and doesn't need a drive bay too.
Money well spent.
I don't have any advice on speakers.
I'm using some ancient Woofers from '00, so ......

Dunno from what ive read (a lot) the XF-i Xtreme music is the latest and greatest sound card, value for money and all.

Speakers, sorry im no help either but i quite like my altec 641's... Everyone says klipsch are amazing - no idea what price

Get the Logitech Z 5500 5.! dts 96/24 bit they are sweet I have a pair of them.

Get the Logitech Z 5500 5.1 dts 96/24 bit they are sweet and powerful @ 505 watts. I have a pair of them. You can find them at Newegg for $213
You can also change the cables if desired. Void is right the Xfi is a dynamic card, and I own that also.
