I have a 600W Powersupply picked out for my rig. Do yall think that a 500W will work well with this one or would it be safer to just keep the 600W?

500Watts should work fine, just make sure it has a good amount of amperages on the +12volt rail on the PSU that you plan to buy. But for future use/upgrades, I would go with the FSP Group FX600-GLN PSU that you have listed.
