Hello,
How is it possible to open the Logitech Wingman 3D to take the vertical axis
cable to add a pedal device for fligh-sim?

it would be substantially easier to make a pedal device from scratch..

you can purchase analog to USB joystick adaptors so you use your new pedal
as a usb controller
