Can I get some feedback from Canon IP users that have used both the Canon
Glossy and Canon Plus Glossy papers?

I'm printing on an IP4000, and my b&w prints are coming out looking fine on
Plus Glossy, but have a pink tinge on Glossy Photo paper. Given that I'm
using a Canon printer, with Canon ink, and Canon paper, I would have thought
that the default printer settings should produce acceptable results on both.

There is a colour shift when printing colour as well - but it is not as
instantly obvious as in B&W. Does anyone have a recommended color setting
for the Canon Glossy that corrects this colour shift??

What you are seeing is the problem with using standard canned profiles, not
every printer, paper batch or ink batch are exactly the same. You need to
profile your printer for each paper type, invest in Profile Prism and a
Canon Lide 80 scanner.
