Go for the plain 6800, hands-down. It's a dirty trick of nVidia's to use "XT" for their low-end cards, when it's a high-end thing for ATi.
The 6800XT may sport more RAM, and even higher RAM speeds, but it's effectively a 6800GT lopped in half; it has only 8 total pixel pipelines, and a 128-bit memory bus, unlike the standard 256-bit bus for high-end cards. (including the 6800, 6800GT, and 6800ultra) Having a 128-bit bus is like cutting the RAM speed in half. You will NOT like it more than the 6800, that's a gaurantee.
If you ask me, a 7600GT will kill any of them, it will actuall come very close to 6800 ultra, I know, it killed my 6800GT Unless you are getting them used for really cheep, you can get the 7600GT for about $170. But betwen both, I will Go with the 6800
There is also a good chance that you can unlock 4 more pixelpipes with a program called rivatuner.
There are only 2 to unlock on a normal 6800...

in my old(er) pc I have a V9999GE which no 7600 can compete with and uses a standard 6800 chip.
I got the core as high as 435MHz (stab.) without tweaking memory.
