So how long do you think it will take before Apple offers the Mac Mini with Core 2 Duo chips? I'm wondering if I should buy the current Mini or hold out for a possible Core 2 version in the very near future :?: .

How near? Seems 4 months away at least. Core 2 Duo isn't insanely faster than Core Duo, but if you need 64-bit support (i.e new 3D packages) then wait.

I'm drooling over the new MacPro (! - a cheaper Woodcrest workstation than Dell or HP).
