You can, but it might not work all that well. Beyond that, it will probably tune to the lessor card, so that any extra features on the better card would be lost. Bigger question is why go SLI on 7800Gt's when a single 7900GT would probably be better and cheaper?

Why do you think, Einstein? He's probably already had one for some time. Now he is getting another one (different brand) since he found a good deal on it and figures why not stick it in in SLI...
As for your question, mix'n'match is not the end of the world. For example, if you have four RAM sticks all from different manufacturers your PC will still work as long as the specs are the same. But generally speaking it is better to have all four sticks from the same manufacturer.
If at all possible, get your second video card from the same manufacturer.
Earlier Nvidia drivers did require the cards to be the same... subsequent drivers are able to work with different brands of cards... so says Nvidia (although I haven't tried this nor do I know anyone with a setup as such)
I remember when the drivers were first released that they had to be exact (or at least the specs) as the drivers could no compensate for a card being able to render and push a single frame out faster than its' SLI counterpart.
If this has changed I was not aware of it, and since I read that from anandtech I just planned on buying 2 of one card if I ever went SLI.
