Hi- I currently have 3 AD-integrated DNS servers and I want to remove one of
them and take it off the wire. What is the best practice for this so the
other DNS servers will know it's gone? Do I just uninstall DNS and make sure
no clients are pointing to it? Thanks!

Deinstall DNS from the target server. Then run DCPROMO.
