should I trust Core Temp or Asus probeII?

I OC'd my E6600 to 3.2GHz with a 1.375Vcore.
Using two instances of Prime95 the temps in Asus probe reach 61C but Core Temp shows 54C

Also, CPU-Z and Asus Ai-Suite show my cpu at 400X8 = 3.2GHz, but Core Temp shows it as 450X8=3.6GHz.

Which is correct? Also, assuming the 61C temp is correct, is it a safe temp?
