Do I have my network topology correct?

I would like to have all of the out bound traffic going through the proxy server without having the client computers manually set to the proxy server's IP adders.

In theory, yes your topology is correct.
But if you're not going to manually set your proxy, you'll want to have your 2k3 server using DNS and push your traffic through the proxy server that. Understand that your 2k3 server will get extra traffic and you may experience delays if your DNS isn't set up right or you don't use your FQDN internally.
