I've been reading that to use 2.1v memory, I'm going to have to boot with 1.9v and then change the settings in bios to 2.1v. Does this sound correct? I'm going with 2 sticks of Patriot Extreme Performance 1GB 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400).

Just curious if that makes sense, I've never really did much modding in bios and this is going to be my first overclock, ect.

what bios version are you running?
if you are running 1.4 and above you should not have issues detecting your ram.

You are not required to increase the voltage on your memory. If you can run a lower stable voltage, I do not see any reason to increase it.

If you are going to overclock you will definitely be increasing it to 2.1 though.

I ran your memory for a short period this is what I was able to run it at on the AB9 Pro with an e6600.

4-4-4-12-2T 334MHz FSB @ 2.1v (1:1)

I probably could have got more, but switched to OCZ memory because of a spectacular sale:)
