Overclock problems - core 2 duo e6600 - GA-965P-DS3

So I built a computer with these specs:

-Enermax ELT500AWT Liberty 500W
-Scythe SCMN-1100 100mm Sleeve
-Intel® Core 2 Duo E6600 2.4GHz
-GigaByte GA-965P DS3
-OCZ Gold 2GB (2 x 1GB) 240-Pin SDRAM DDR2 800 (PC2 6400)
-Sapphire Radeon X850XT 256MB

Then I overclocked to 3.0 ghz following the Tom's Core 2 duo OC guide rather easily. Then about 2 weeks later, I was running TAT to check my temps, and I noticed it was back down to 2.4 ghz.

My mobo had reset the settings on its own at some point. Now when I go back into BIOs and try to OC again, even a tiny bit, my computer shuts down and resets to stock settings.

What I don't understand is that I turned off all possible failsafe settings to allow me to OC, so I don't know how it's resetting them. Anyone else having these problems?

I have a DS3 (bios F7) and E6400. I've been messing with overclocking too, and this happened once, where I'd do something wrong, and change the settings back to my last stable result, or try some other settings, and then find that it had reset to (almost) stock settings instead. I'm not sure what caused it, and it only happened once, so I just hope it doesn't happen anymore.

If I remember right, the only thing it really changed was the FSB frequency back to the stock 266. As far as I remember, it left my voltages (which were a big part of my problem :oops: ) intact.
