That depends...

If you want to hide your IP from a website you can use a proxy. There are many out there just google for them.

If you want to spoof your ip, sorry, look elsewhere (I don't want to contribute to the script kiddies attacking my servers all day).

There are many ways of hiding your ip address, but you'll have to find those yourself.

Worrying about your IP with websites is the least of your problems. There are a huge number of tacking scripts and cookies being run. Facebook and google are the worst offenders. There are facebook hooks on many many site and facebook is pretty insistent on having real names phone numbers. So they tie your real identity to lots and lots of stuff outside of facebook. Just run the ghostery plugin for firefox and you will be surprised the huge amount of stuff that is being run strictly to track you that provides very little benefit for you.
