I was thinking about waiting for ATi to release their DX10 card because there will be no DX10 software for like next 7-8 months.
But then, I don't know should I just go with 8800GTS and should I sacrifice 6600 to 6300 to get 8800GTS instead of X1950Pro?
Or pay a bit more money and take E6600 and 8800GTS?

8O Don't buy any GPU better or more costly than a 7600!!! We are mere weeks away from a slew of new DX10 card arriving on the shelves. Even if you have your heart set on a 8800, new cards could lower it's price. More likely you will find one of the new cards has better price/performance value.
Flightsim X gets it's DX10 patch in a couple weeks. Crysis will play in DX10 mode if you have a DX10 card. Expect that all of the big title new games coming this year will handle DX10. It's just that they will also play in DX9 mode since there are bazillions of those cards running today.
