Do not Install SP2 GP Template

I wasnt to use the Group Policy offered on the MS
website. My question is when I target the GPO can I just
apply it to the OU that contains all my workstations or
do I need to target it to only XP machines?

If you target this at computers that are not running Windows XP the policy
setting it will simply be ignored so there is no harm in doing so.

updates or just SP2?

Just the XP SP2 update. It's sole purpose is to provide temporary delay of
the XP SP2 update being available through Windows Update or the Automatic
Updates client. For more granular management of updates in your environment,
Software Update Services (SUS) or Systems Management Server (SMS) are the
recommended solutions.
