Hi. I'm new to the PPC. I've got a Dell Axim X50, which supports SD and
Compact Flash cards.
My question is - can I install an application (a big one, like Age of
Empires!) to the SD card rather than to the unit itself? Of course, I'd
have to have the card in to run the program... Will this work?

Not quite correct for all programs, but yes, generally speaking.
Not all applications will work correctly on a memory card, and some can
run so slow that they are almost unusable (eg some VB applications).
Some like streetplanner ask for main memory installation as it may not
work on a memory card- it won't for me. All you need to do is try-
there's the option to uninstall/reinstall in main memory if needed.

Just to add to Alan's comments here....
I do a lot of software add/removes for reviews I'm writing, etc. I've found
as a general rule that if the application touches the Today screen in some
way, install it into Main Memory. It behaves much better and is far more
responsive than off a SD card.
