Moving Roaming profile to a new server.

We have roaming profiles and redirected "my documents" folders stored on our
current file server which is also a SQL server. I want to move the profiles
and "my documents" folders to a new file server so that the old server can be
a dedicated database server.
We have tried to copy a test user over to the new server and created a new
policy in AD. Everything redirects fine except the my documents folder.
This only works if we recreate the profile.
Is there an easy way to copy all the profiles and "my documents" folders
over without re creating all the profiles?

Have you tried to simply copy the roaming profiles and my documents over to
the new server and change the respective roaming setting?

I have copied both over and changed the policy and settings in the users
properties.
The profile changes over fine but it loses the path to the my documents
folder.
The only way to correct this is to delete the profile and recreate it which
is impractical for several hundred users.
It does however connect the home drive specified in the users properties.
