I've been looking up NWN cheats online. Some of them aren't explained at
all though, there are a lot of sites saying that you can play in "God Mode",
but I can't find anything that explains exactly what "God Mode" is. Seems
strange that nobody would even say. What can you do in God Mode that you
can't otherwise?

Also, does anybody know of a cheat to allow you to open doors that would
otherwise remain locked?

Actually, it's not so much what you can do as what you can't - you can't
die.

There is a command "dm_god" which makes the player invulnerable, but I've
never used it. Another way would be to open the DM window by typing <ctrl +
..> in Debug Mode. Here you can select the player char and apply the effects
you want. Very handy...

AFAIK there is no command for that. The only way I know about is to figure
out the ResRef of the key with the toolset and spawn it in with the
dm_spawnitem command.

Stay alive !

I've used it a couple of times when I just *can't* defeat an enemy - Gringaw
in HOTU for example.
