I recently had a 3LNB dish with built-in 3x4 multiswitch installed,
but currently only have 2 coax's from the dish (I screwed up when
wiring the house...).
If I hook up a 5x8 multiswitch to these 2 inputs, will all my
receivers be able to get all non-HDTV channels?
I realize that when I want to get HDTV I'm gonna have to run 2 more
coax's between the 2 multi-switches.

The built in multiswitch on a 3 LNB dish is a 5x4. There are 2 dual LNBs and
a special single.
You can attach your present 2 cables to the Sat A inputs of a 5x8
multiswitch and all 8 outputs will deliver the same programming as your old
round dish. You can add the other 2 cables to access Sats B and C whenever
you want.
