I believe Dish sends its signal 720p, not 1080i. Assuming that is
correct, what is happening when I choose 1080i mode from my Dish HD 811
receiver? The image on my 16:9 HD looks different when using the 1080i
but maybe it isn't. Should it be? Is 720p somehow being converted to
1080i, and if so, is there any benefit at all to that conversion?

You should set your receiver to output whatever native resolution your
TV uses: 720p or 1080i. The receiver will convert between the two
formats without much loss in resolution either way.
You don't want to have the box output a signal that will then have to be
converted again in the TV. So set it to your TVs resolution. Most LCDs,
DLPs, plasma as 720p. CRT sets are normally 1080i.
