Budget: $1800 or so
Dual Purpose: Data mining applications for my home office, and gaming
Req's: Fast HD seek times and fast processor for optimal MySQL/data-mining, and a strong enough graphics card to support gaming in 1920x1200.
 
I plan to overclock the CPU according to the stickied guide.
 
I've never built a system before - so please if there's any glaring incompatibilities let me know.
 
Questions:
Will getting another HD and using 3x RAID0 be significantly better than 2xRAID0?
Will the power supply be sufficient, and have room to expand?
Aside from the CPU and the ones included in the case, would anymore heatsinks/fans be needed/suggested?
Am I using any dying technologies that will be hard to upgrade for later?

The PSU is hardly enough for the system because of the graphics card so I'd go for a stronger one, at least if you are going to upgrade it sometimes for example to SLI or a better processor.
Maybe some of these?
Tagan TG700-U25 (700W)
Thermaltake Toughpower 700W
Seasonic M12-700 (700W)
SilverStone SST-ST65ZF-GM (650W)
Antec TP3-650 EC (650W)
Or any else PSU around these wattages.

Good system, might bump a couple things so think about my reasoning.
 
Instead of adding a drive to the Raid, I would get a good sized Data drive. Hear that Seagate Baracudas are fast, 320 is good start.
 
PSU will run your system. A little light for more upgrades. 600-750 W might last longer in to the future.
 
Should fine on cooling.
 
Are you going to use SLI? Mb will accept it.

The ePOWER 550W has 38A combined if you look at the photos at newegg. The brand is a question mark. It might work for a few days or months then go down. I'd pick any that exceeds the requirement from this list:

I don't see anything that's incompatible.

Looks good, but I agree on the need for a data drive.  
 
Also agree: get a better brand (quality) PSU, it's a must in my opinion given the fact this will be used for business as well.  You need something quality, stable, and "expandable" in that it can handle additions/upgrades to your system in the future.
 
Other than that, looks great.
