a friend of mine basically has the same system, but a slight notch down on the mobo (he has the 590i). his 8800 rocks the hell out of games like doom3 and fear. on my pc, however, doom3 and ut2004 don't seem much better than the x800 on my previous machine with some slight choppiness, although the fps is up in the 200's.
im assuming youre not using vista, and that this will even work with an GF8800 (because it requires the older format nv options menu from what ive seen)... but... if you download and install coolbits, it has an option in it to adjust the max frames to render ahead... by default its set to 3, which can cause studdering/choppiness, even with high framerates... but if you reduce it to 0, it should smooth things out some
Secondly, I don't quite get what your saying. Your 8800GTX is working perfectly if you're getting 200fps. You're not going to notice anything different if your X800 was pumping out anything above 40. Those extra 160fps are bragging rights.
Put on Oblivion, run it with your X800 and with your 8800GTX, and then tell me the 8800GTX isn't faster.
