Hi ive recently come across a dell which was given to me. I was thinking about building my own before i got it. The dell is a 9200:
cpu: e6600
graphics card: 7900gs
hard drive: 2x 160gb in raid 0
ram: 2 gb ram provided by dell and 2 gb bought myelf
sound card: x-fi audigy

Thats all i can think of. I was wondering if i built my own system could i just use the cpu, graphics card, hard drive, ram and sound card? and just replace the mobo, fans, psu etc. Would this allow me to overclock? and would it give me better performance?

That will work. I recommend a Gigabyte DS3 for your motherboard and a Silverstone PSU with at least 500 watts, the more the better!

You could gut a high-end Dell, but the resale values of its remaining parts would drop a lot. What I'd do is to sell this Dell & use the money to buy new parts. Don't have to be identical. An overclocked 4300/6300 with semi-good ram & a good o/c mobo.

Oh BTW, the modern OEM pcs like Dell use standard PC parts. Perhaps, except the cases & psus.
