Is memory or model more important?

For example, if an x1950 with 256MB is about the same price as an x1900 with 512MB, which will work better? I use graphics tools on two monitors (2 x 1280x1024 or more pixels) and some graphics-intensive games.

For systems, I would normally choose more memory over cpu speed, but I am not sure whether the same logic holds for graphics cards?
