    There are five different Eevee evolutions possible in FR and LG;
Vaporeon (with the Water Stone), Jolteon (with the Thunder Stone),
Flareon (with the Fire Stone), Umbreon and Espeon (those two require
trading to Ruby or Sapphire and the proper time: day for Espeon, night
    for Umbreon.)

Aside from the Water, Thunder, and Fire Stones, there are Moon Stones,
    Sun Stones, and Leaf Stones.

    Any more questions?

Like the original Red/Blue, element stones are available
for sale at the Celadon City, so Eevee can become Vaporeon,
Jolteon or Flareon. You need to trade to Ruby/Sapphire to
    evolve an Umbreon or Espeon.

Well, if you want Umbreon insteed of Espeon or Espeon insteed of
Umbreon you must trade to R/S/E there is a time of day, you still can
get the Johto Eeveelutions in Fr/Lg it's just diffrent since it isn't
day or night there! And also you must beat the Pokémon League and have
60 pokémon in your PokéDex and get the nationalDex!

Everstones prevent evolution rather than cause it. They can be found on
Route 10 in FR/LG, and possibly carried by wild Pokémon.

A Sun Stone can be found on Six Island. Any more than that need to come
    from R/S.

If you don't mind mugging Clefairy, you can get a lot of Moon Stones as
    well.
