I have 4 sticks total of memory, I'm currently using 512x2. I also have 256x2 that I'm not using. Now one stick of 512 is pc3200 and the other is pc2700. One of the 256 is pc3200. Which is better to use?

A) 512(pc3200)+256(pc3200)

B)512(pc3200)+512(pc2700)

I only have two memory slots on my Motherboard

(B) Assuming you are running Windows, going from 512MB->1GB should be better than 512MB->768MB, especially for a relatively small speed difference, as in your case.

I forgot to ask this earlier but does it matter for overclocking what speed the ram is? Would i get a better overclock from the pc3200 ram rather then the two sticks of 512?

It depends. Just like any chip, some OC better than others. In almost all cases concerning Windows, having more RAM is more important than memory speed.
