If one put one of these up as the primary computer (they don't have a hard drive) would the other real computers be vulnerable to hacking while not in use on the same network?

Are you saying you'll be using the lyndows machine as a dumb terminal to access a server/main frame?

Hacking is always a possibility. Depends on how indepth your security is really.
