The main difference between Crossfire and SLi is that SLi require to two of the same SLi compatible cards (e.g. x2 7600Gt), where as crossfire allow two different card to be used together as long as they are crossfire compatible.( e.g. X1900 XT and X1950 CF)
As for the performance boost that really only helps when you are playing at higher resolutions.

I don't completely get the poll do you mean, the products they make or the companies as a whole

Drop the sound card, drop the Raptor to a Seagate Barracuda, and with the money you save get the 8800GTS. 2nd fastest card on the market and a good price to boot. It'll spank anything ATI has right now. And yes, ATI's stuff is coming. If you can wait that long then great, but if not then Nvidia is the way to go. A few frames difference between ATI/NV won't make much difference. If you need a system now, get the 8800GTS with the money you save from those other parts. It'll make ALOT more difference in gaming than a Raptor for sure.

You can always add a soundcard later too. Save your cash and get the GTS, you'll drool at the horsepower ;)
